About Iberico Ham
We work with the best qualities of ham: 100% Iberian Acorn-fed Ham (pata negra), Acorn-fed Ham 50% Iberian breed, Iberian Cebo de Campo Ham 50% Iberian breed and Iberian Cebo Ham 50% Iberian breed.
Our Iberian hams come from the meadow of Salamanca, where our pigs move freely, and where we cure them in the traditional way.
You can order your whole ham cut by knife at no additional cost in the pieces where this is specified.
The shoulder corresponds to the front legs. The ham corresponds to the hind legs, due to the constitution of the pig, the hind legs are more meaty, but the quality of our hams is indisputable wherever they come from.
About Cheese
From our Hacienda Zorita Organic Farm, a cheese factory located in San Pelayo de Guareña (Salamanca), a beautiful Land Art style cheese factory where sustainability and commitment to responsible production are paramount in our multi-award winning cheeses.
Our cheeses come from endangered species, such as the Verata goat, the Churra sheep or even the Zamorano-Leonesa donkey.
These cheeses come from sheep's milk that has not undergone any pasteurisation process. The flavour of raw milk cheeses compared to pasteurised milk is that they offer a more intense flavour with a lot of personality.
At the Hacienda Zorita Organic Farm cheese factory, we have the invaluable collaboration of the Buleza cooperative, which is in charge of marketing this donkey's milk.
